Kentucky’s Fire Prevention Code, at 815 KAR 10:060, adopts the National Fire Protection Association’s NFPA 1, Fire Code (2018 edition) as the state’s fire code. NFPA 1 incorporates NFPA 96, the Standard for Ventilation Control and Fire Protection of Commercial Cooking Operations, for commercial kitchens — which is how NFPA 96’s cleaning schedule and documentation requirements become the standard the fire code Kentucky and Lexington enforce. The local fire inspector, as the authority having jurisdiction, is who applies it in your kitchen.
NFPA 96 governs the entire exhaust path for any operation producing grease-laden vapors (Type I hoods): design, fire suppression, filters, and — in Section 11.4 — inspection and cleaning frequency by cooking volume (monthly solid fuel, quarterly high volume, semi-annual moderate, annual low), plus the requirement that each cleaning be documented and the record kept on premises for the AHJ. NFPA’s report Structure Fires in Eating and Drinking Establishments (2017 edition, 2010–2014 data) found an average of 7,410 structure fires a year in these properties, 61% involving cooking equipment, with failure to clean a factor in 22% of fires.
